Following are several nutritious snacks you and your family should enjoy.

Eggplant Pizza Slices

1 medium or large eggplant

Mozzarella, Swiss or Muenster cheese

Tomato sauce

Salt and oregano to taste

Slice the eggplant into 3/« inch slices, spread each slice with enough tomato sauce to cover top.

Top sauce with cheese—whatever kind you have available, but mozzarella, Swiss or Muenster are best. Sprinkle with salt and oregano. Slices should be placed on flat sheet, a cookie sheet or a pizza tray, and baked at medium low heat until done (about 30 minutes).
