Southern Dandelion
Greens
5 cups dandelion greens
1 cup cubed ham or smoked pork hock
1 medium onion, diced
3 pints water
Salt and pepper to taste
Simmer the ham or pork in. tha water, .to which riiaad. onion and seasoning has been added. Cook until broth is rich and meat is very tender. Meanwhile, take young leaves (picked before blossoms appear) and cook them in a couple of waters to remove any bitterness. Add greens to the kettle, cover and simmer 15 minutes. Season and serve with combread.
Dandelion Root Coffee
Gather roots in the early spring (before the blossom appears) or in the fall. Clean roots by scrubbing with a stiff brush. Place in a slow oven (150) and dry until brittle (about four hours). Increase heat to 375 and bake for about 15 minutes or until roots are very dark brown throughout. Put through grinder, whiz in blender, or crush with rolling pin until it has the appearance of coffee grounds. Boil about one teaspoon per cup and strain before drinking.
