This Easter decoration will cause Peter Cottontail to stop in his tracks. Youngsters’ eyes will sparkle when they see this on the* table just waiting to be cut.
It is much easier to prepare than what appears at first glance. Coconut may be tinted green for the grass around the bunny ahead of time and set aside on paper towel to dry. To do this, put 2 cups (or desired amount) in a glass jar with lid. Combine a couple of drops of green food coloring with 1 to 2 tablespoons of water. Place lid on container and shake until the coconut is evenly colored. Spread evenly on paper towel and allow to dry.
The cake may be made using your favorite two-layer recipe (use 8 or 9 inch round pans) or, to save time, a yellow cake mix does nicely. Prepare the cake as directed. Let cool.
While cake is cooling, prepare boiled frosting using your favorite recipe or the one suggested below. Let frosting cool completely before using.
Now you are ready to begin assembling your decoration. Cut a piece of cardboard 13 inches by 19 inches. Cover with foil or white .freezer paper. Cut one layer in half. Place cut sides down side by side on the center of the board. Spread a tablespoon or two of frosting between the layers to hold them in place. The second layers needs to be cut as shown in illustration. Using the pieces marked head, place the short cut side next, to the body pieces. Again, use a bit of frosting to hold the two pieces together. There will be a gap between the head standing up and the body. The back legs can be put in place by positioning the right angle at the back so that the curved side is going toward the front. Secure each piece to body with frosting. Position the front paws so that a portion of the cake extends beyond the body. Secure. Cover the entire cake liberally with frosting. Cover with coconut. Facial features can be made by using jelly beans - pink for eyes, black for nose, and red for mouth. Ears may be cut from pink construction paper and positioned on top of head.
