Here are some timely hints on herbs:

• Store herbs in glass jar away from light and heat. The flavor should last up to one year.

• Dried herbs are more potent than fresh herbs: 1/4 teaspoon = 2 teaspoons fresh.

• If you are unfamiliar with the flavor of an herb, try adding it to a small amount of butter or cottage cheese. Let the mixture stand about an hour to absorb the flavor. Then try it on a plain cracker.
