Dandelion bud omelet
1/2 c. unopened dandelion buds
1/2 c. finely chopped onion
2 T. butter
Dash Worcestershire sauce
5 eggs
2T. milk or cream
1/2 c. grated cheese
Salt and pepper to taste
Beat eggs and milk. Set aside.
Saute onions and dandelion buds quickly in melted butter. Add dash of Worcestershire sauce and stir. Pour egg mixture, over the sauteed mixture. Cook over medium high heat. Using a fork, dredge from outer edge to center several times around the pan. When egg begins to coagulate, turn it over to cook the other side, using spatula. When cooking is complete, sprinkle grated cheese on top of egg. Fold
