Virginians - it’s time to search your files for the beef recipes that your family or friends have raved about. The good news for the 1988 Virginia Cook-off is that not only have prize monies increased this year, but this will be the first public cook-off in the 10-year history of the statewide contest.

The Virginia Cattlewomen have set the 1988 contest for May 21 at the Omni-Charlottesville Hotel. Entries are being accepted now and must be received by April 8. Five finalists will be chosen to prepare their beef recipes at the public cookpff beginning at 8 a m. with judging to commence at noon.

The top prize for the Virginia Beef Cook-off is $500 and the opportunity to compete at the National Beef Cook-off where a recipe can earn $15,000. Second prize is $250, third is $100 and fourth and fifth places each earn $50.

Recipes that have 300 calories or less per serving and those that are convenient to prepare will be of special interest to the selection panel. These two aspects of beef cookery fit into contemporary lifestyles and will make others want to try the recipes. At the cook-off, coordinated by the Virginia Department of Agriculture, recipes will be judged for taste, appearance, originality, ease of preparation and practicality.

Here’s how to enter:

• Submit a recipe typed or legibly written on 8'/2xl 1-inch paper. Include your name, address, phone number and a brief statement about the origin of the recipe.

• Recipe must contain between one and five pounds of any fresh cut of beef, excluding organ meats such as heart and liver. Each serving must contain at least three ounces of cooked beef. No meats other than beef can be used in the recipe.

• Total preparation and cooking time must not exceed four hours. This does not include preliminary preparation such as marinating.
