Spring is here, and so is asparagus time. Whether one likes it raw, cooked, or both ways, asparagus is one of the most popular vegetables consumed in the United States. Often referred to as “spare grass,” spring-fresh asparagus is wonderful raw - with a dip or added to a green salad. It is equally wonderful when cooked just until tender.

When buying asparagus, look for firm, straight stalks and closed compact tips. Choose spears that are uniform in size, so that all the stalks cook in the same amount of time. De
