Because asparagus continues to grow after it is picked by utilizing the water content of the stalk, the bottom of the stalk quickly becomes fibrous and tough while the tip stays tender. For this reason, asparagus doesn’t store well when allowed to stand in water. Standing in water also encourages the asparagus to mold. If asparagus cannot be used within a couple days, wrap a moist paper towel around the stems and refrigerate.
