Salad days are here again. With the weather getting steadily muggier, a hot and heavy meal is the last thing anyone wants to consider eating, let alone cooking.

Whether from a calfs leg or a crab, salads featuring meats always seem a little more special and certainly a lot more nutritious than just a plain lettuce salad.

Some of the all-time classic salads were obviously invented to disguise the second time around for the previous day’s special roast beef or baked ham.
