2 tablespoons cinnamon
8 tablespoons (1 stick) butter
1 large onion, thinly sliced
6 large tart apples, peeled and sliced */« inch thick
30 Ritz crackers, crushed
1 cup apple juice or cider
Preheat oven to 325 degrees F. Butter 1-quart baking dish. Combine sugar and cinnamon in small bowl. Melt 2 tablespoons butter in large skillet over mediumhigh heat. Add onion and saute until golden, about 10 minutes. Remove onion using slotted spoon and set aside.
Melt 3 tablespoons butter in same skillet over mediumhigh heat. Add apples and cook until golden, stirring occasionally, about 12 minutes. Spread half of apples evenly over bottom of prepared dish. Top with half of onion. Sprinkle with half of sugar-cinnamon mixture and half of cracker crumbs. Repeat layering. Pour apple juice or cider over top. Dot with remaining 3 tablespoons butter. Cover and bake until bubbly, about 1 hour.
