Using a fork to dip them on one side, then pouring the batter on the tops helps to handle them less and keep them from breaking.

Combine sausage, tomato sauce, bread crumbs, and butter to make a filling for the peppers. Then bake at 350 degrees until sausage is well done (approximately 30-45 minutes) and peppers are tender. Put a little water in the cooking pan to keep the vegetables from scorching on the bottom.

Broiled Tomatoes

Here’s one you can eat now or freeze for a cold winter night. Coat tomato slices in a flour and cracker crumb dip. Cook them until softened in a little bacon fat in a covered pan. Then broil them uncovered until crisp. They can be frozen right in the pan, then wrapped in foil for later reheating.
