Flavors of Virginia honey are influenced by the trees or plants from which the bees collect the nectar. Tulip poplar honey is the most common in the state. It is distinguished by a dark, reddish color and full-bodied flavor. Other flavors include clover, sourwood, thistle, black locust, and wildflower.

Storage .

Honey will keep fpr prolonged periods of time if properly stored in tightly closed containers at room temperature. Varieties of honey crystallize at various rates. Most Virginia varieties are slow to crystallize. If crystallization does occur, simply loosen the cap and place the jar in hot water no hotter than your hand can stand. Crystallization does not harm the honey, but too much heat can alter the flavor and color.

Cooking with honey

We all know how delicious honey tastes served on hot buttered toast, pancakes, waffles, muffins and biscuits.
