1863, in the midst of civil war, President Lincoln proclaimed the holiday. Pilgrims and Indians of yore had indeed consumed a vast feast, but of necessity a low-fat one - lots of squashes, root vegetables, corn, fruit, and huts, as well as fish and wild game, and huge quantities of beer. Dairy products were scarce; there may have been some heavily salted butter or hard cheese brought by the immigrants.
