That holiday favorite, the fruitcake, is the star of Favorite Fruitcakes: Recipes, Legends and Lore from the World’s Best Cooks and Eaters by Moira Hodgson (HarperCollins, $12.50). Included are 38 delicious traditional recipes from such notable cooks as Jeff Smith, Marion Cuningham, Julia Child, Craig Claiborne and Maida Heatter.

The book quickly dispels the cliche of the cement fruitcake by presenting recipes for chocolate, white, ricotta, pear and a lighter applesauce version. Some of the firuitcakes are made with Guinness, bourbon, sherry or rum and can include such surprises as dried cherries, blueberries, cranberries or espresso.
Hodgson stresses that you don’t have to be a great cook to make a great fruitcake. The recipes are simple and ingredients are flexible.
