We used a lot of potatoes. I always liked it when Mom would make too many mashed potatoes and the next day or two we would have fried potato cakes. If they would have let me, I could have lived on mashed potatoes and applesauce. Sometimes, I think I did.
Did you ever drink potato water? This was another treat that was a byproduct of cooking spuds, i.e., the water you boiled the potatoes in. Most of the time, Mom put that water in the gravy along with milk, because she knew that a lot of the vitamins and minerals cooked out of potatoes when you boiled them, and since there was very little leftover gravy at my house, it was just another good country way to feed the family.
But, sometimes, there would be a little extra water. If there was a chill in the air, and some of us were hanging around the kitchen, Mom would give us another treat. She would pour some of the water that the potatoes were boiled in, into a cup. She would add a small pat of homemade butter and a little salt and pepper. Try it sometime. It is a wonderful, warm
