Several people requested the recipes so I promised to put them in my foods and nutrition column this week. Elegant chicken casserole (Maybelle Gilkey) 2 10-oz. pkgs. frozen broccoli 2 c. cooked, sliced chicken 1 can cream of chicken soup 1/2 c. low-calorie mayonnaise 11. lemon juice 11. curry 1/2 c. shredded cheese 1/2 c. soft bread crumbs Cook and drain broccoli. Arrange stalks in shallow casserole placing chicken on top. Combine soup, mayonnaise, lemon juice and curry. Pour over. Sprinkle cheese on top with bread crumbs from day-old bread. Bake 30 at 350 degrees. Serves: 6-8. Note: To make this casserole “heart-healthy,” use low-calorie mayonnaise and a cheese made with skim milk like mozzarella. Also, use a reduced-sodium condensed soup.
