Next comes the fun part — the taste test. (Now, beware, some bakers do not give out samples during the cake interview, but will at bridal shows.)

Today’s cakes and frosting come in a variety of flavors, meaning the choices are more complicated than the original wheat and barley. The best bet is to talk with the baker about what will be appropriate to the season the wedding is taking place (June, as opposed to December), where it is being held (inside or outside), and the setting (casual or formal).

Lastly, to make sure the cake is at the reception the same day you are, be sure to order the cake in advance, two months in some instances.

Secrets

The wedding cake is to be shared with treasured guests, but it is also a tradition to save the top tier of the cake for the first anniversary. Nowadays, couples can even special-order this tier in their own favorite flavor.

Then all they have to do is wrap the top tier securely in plastic and place in the freezer. In one year, they unwrap and celebrate all over again.

When the big day finally arrives and they are ready to cut the cake, the bride and groom make the first slice of the cake together. The groom’s right hand should be over the bride’s right hand for the cut — and they can be thankful the cake isn’t going to get cracked over anyone’s head.
