Ground beef is not only economical, but also nutritious, it keeps well in the freezer, and it can be used in trend-setting recipes. Susan L. Wiley, marketing specialist, Virginia Department of Agriculture
and Consumer Services, says that shoppers should watch for outstanding buys on ground beef from now through September.
All beef cuts have been very reasonably priced this summer. However, the number of cattle on feed are down, and beef prices may increase slightly in October and November. But even when beef prices are up, ground beef is always a good buy. One pound of ground beef makes a minimum of four servings or as many as eight servings when used in casseroles, stews or meatloaf.
Ground beef at regular price is a good buy, and when on sale it is a great buy. Whenever ground beef is featured at the supermarkets, buy extra and freeze in small packages or in patties.
If you like hamburgers, shape ground beef into 1/2-inch thick patties, freeze until firm, then seal in airtight bags and store in the freezer. Uncooked ground beef will j keep three to four months in the freezer.
