Scalloped apples and ham
3 cups diced, cooked ham 4 medium apples, peeled and sliced 1/4 cup sugar 1/4 teaspoon ground nutmeg 1/4 teaspoon black pepper 1/3 cup apple juice 1 cup complete pancake mix 1 cup milk 2 tablespoons melted butter
Layer half of ham and apples in a large baking dish. Combine sugar, nutmeg, black pepper and sprinkle over layer. Repeat the procedure. Pour apple juice over the mixture. Cover casserole and bake at 350 degrees Fahrenheit for 40 minutes or until apples are tender. Make a batter by blending pancake mix, milk and butter. Pour over hot apple and ham mixture. Bake, uncovered, for 20 minutes longer or until topping is puffed and golden. Makes 6 servings.
Apple dessert dumplihgs
Cinnamon Applesauce 3 cups applesauce 1/2 cup sugar 1/2 cup cinnamon redhots 1 tablespoon grated lemon rind 1/4 cup water
Nutmeg dumplings 1 cup flour 1-1/2 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons sugar 1/4 teaspoon nutmeg 2 tablespoons shortening 1/2 cup milk
Combine all ingredients for cinnamon applesauce in saucepan. Bring to a boil. Pour into an 8 x flinch square baking dish. Sift together dry ingredients for dumplings. Using 2 knives cut in shortening until mixture resembles coarse commeal. Stir in milk. Drop dough by small spoonfuls onto applesauce mixture. Bake at 350 degrees Fahrenheit for 10 minutes; cover and bake an additional 15 minutes. If desired, place under broiler momentarily to brown dumplings.
