Many individuals who have been canning and freezing vegetables and fruits regularly for years could be using older information if they are still using directions that came with equipment acquired many years ago. The equipment is still good, but the information may be out of date.

“Food preservers need the use and care manuals that came with their equipment to know how to operate the equipment, but they need to use the latest U.S. Department of Agriculture recommendations on procedures and time,” said Jo Anne Barton, Virginia Tech Extension specialist in foods and nutrition.
