Instead of going to all the trouble and mess of making a crust for fried pies try egg roll wrappers to make Peach Stix. These fried pastries should be eaten soon after frying. They become soggy when left for a time and do not reheat well.
Crepes are easy to make, especially if you have a supply of crepes on hand in the freezer. To serve spread the crepes with cream cheese that has been flavored with almond liquer—folded into quarters and topped with peaches warmed in butter and brown sugar. A garnish of sliced toasted almonds add just the touch.
