Apple-peach pie 1 cup coarse popcorn flour (made by processing 2 cups popped popcorn in food processor or blender) 11/2 cups whole wheat flour 2 sticks cold butter, cut into small pieces 1/2 tsp. salt ice water if needed 3 Macintosh apples 2 peaches juice of 1 lemon 1/4 to 1/2 cup sugar 2 cups coarsely chopped popped popcorn 1/2 cup butter 2 tsps. cinnamon 1 tsp. nutmeg 1/3 cup brown sugar Quickly mix popcorn flour, whole wheat flour, the pieces from 2 sticks butter and salt. If mixture does not come together, add ice water, 1 tsp. at a time, until it does. Wrap in plastic and refrigerate 1 hour. Roll out and press into 9-in. pie pan. Refrigerate 30 minutes. Bake at 350 degress for 20 minutes. Peel and cut apples and peaches into chunks. Toss with lemon juice and sugar. Turn into baked shell. Return to oven for 20 minutes. Combine the chopped popcorn, the 1/2 cup butter, cinnamon, nutmeg and sugar. Spread over fruit. Return to oven for 15 to 30 minutes, until topping is nicely browned. Serve warm.
