Beyond the security of the contract, he added, “look at the cost.” The county pays $9 per day, where every other jail in the state with its own kitchen feeds its inmates for $2 to $3 per day. With a kitchen at the jail, Mr. McCarthy said, the county can buy products in bulk, as well as perhaps qualify for government programs which supply surplus food at greatly reduced prices.
And the outside supplier is figuring a profit into the cost charged to the county, he pointed out, noting that the food service for the jail cost the county $42,000 last year. “Everything which is a profit margin for the businessman would be a cost savings to the taxpayers.”
He estimated that the addition will cost between $150,000 and $200,000, and that the cost could be recouped in five years by the savings in having the meals prepared inhouse.
