Pooh Baker used to make her savory cheeses to give as Christmas gifts. Now she has turned her cooking talent into a successful business.
At the urging of friends, Ms. Baker decided to open The Bam at The Poges, and began producing six savory cheese spreads and three sweet cheeses last December. Her kitchen is located in a converted guest house/art studio right next to her house on Old Post Road in Viewtown.
In the beginning, she leased a kitchen in Middleburg, but driving over an hour to get there was not feasible as she also has a working thoroughbred farm. With all the driving she did, she could barely do more than wave at her horses each day.
With the horses, she said, she had to wait nearly three years for gratification, waiting 11 months for the mare to foal and then at least a year and a half before selling the foal. Now, she said, her product can be made and sold all in the same day.
