2 cups flour, sifted
2 tsp. baking powder
1 tsp. salt or to taste
2T. sugar
4 T. cold butter, cut in pieces, or solid, white vegetable shortening
3/4 cup milk
2 cups rhubarb, in 1/2 inch dice
21/2 T. butter
1 cup sugar
Preheat oven to 350 degrees.
Sift flour, baking powder, salt and sugar. Cut in 4 tablespoons butter or shortening. Add milk to make a soft dough. Knead about 10 times on a lightly floured board, shape into a rectangle and roll to 1/8-inch thick.
Spread rhubarb evenly over dough, leaving a 1/2-inch margin all around. Dot generously with butter, sprinkle with sugar and roll up like a jelly roll, tucking in the edges of dough on each side and on the ends.
