The lean-to-fat ratio is the proportion of lean meat to fat in the ground beef. The label will say, for example, “not less than 70 percent lean” - that means that the ground beef contains 70 percent lean meat and 30 percent fat. You will never find ground beef sold that is less than 70 percent lean and will find lean contents as high as 90 percent.
