Mexican lasagna 1-1/2 pounds lean ground beef 14-1/2 ounce can diced tomatoes 1 clove garlic, diced 1-1/2 teaspoons cumin 1 teaspoon red pepper 1/2 teaspoon chili powder Black pepper and Hot sauce to taste 12 ounces cottage cheese legg 1-1/2 cups Mozzarella cheese 12 corn tortillas 10 green onions, diced 6 ounces olives, sliced 2 medium tomatoes, diced 2 cups lettuce, sliced 1 cup cheddar cheese, grated Directions: Brown ground beef and drain off fat. Add can of diced tomatoes, garlic, and spices to cooked, drained ground beef. Let simmer. In a separate bowl combine cottage chese, egg, and mozzarella cheese. Place 6 corn tortillas in the bottom of 9x11x2 inch pan. Pour ground beef mixture over this. Place 6 more tortillas on top of this and pour on cottage cheese mixture. Bake at 350 degrees for 30 minutes. Top cooked casserole with copped green onions, sliced olives, chopped lettuce, diced tomatoes, and grated cheddar cheese. This recipes makes 8 servings, each approximately 490 calories.
