Oakleaf - A nut-flavored lettuce, oakleafs availablility is sporadic because the lettuce does not ship well. If not available in your market, it can often be ordered through the produce department.

Curly endive - This thick bundle of greens has firm, curly leaves that add an interesting texture and tangy flavor to salads.

Radicchio - Deep burgundy in color, radicchio adds a chewy texture and slightly bitter taste to salads. Radicchio grows in tight, round heads.

Arugula - It has a pleasantly bitter, pungent flavor. Small, narrow leaves signal a young, tender plant.

When preparing salads, be sure that the salad dressing doesn’t overwhelm the salad, especially if you’re using tender, delicate greens. The classic vinaigrette dressing of olive oil, vinegar, and herbs in best. The vinaigrette dressings can be varied by using flavored vinegars, different herbs, lemon or lime juice, and honey in place of sugar.
