1 head radicchio, torn 2 bunches arugula, tom 2 heads Belgian endive, tom Blue Cheese Vinaigrette Toss greens with enough Blue Cheese Vinaigrette to coat. Serve immediately. Yield: 8 servings.
Blue Cheese Vinaigrette
2/3 cup olive oil ■ * 2 ounces crumbled blue cheese (1/2 cup) 3 tablespoon white wine vinegar 1 teaspoon dried whole oregano 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper
Combin all ingredients in a jar; cover tightly, and shake vigorously. Yield: 1 cup.
