Judy Burke, director of food service for the county public schools, said she does not anticipate much trouble meeting new USDA guidelines for school foods.
The proposal requires school meals to meet the recommendations of the Dietary Guidelines for Americans by the 1998 school year. This will mean requirements that school meals be lower in fats.
Mrs. Burke said that lower fat has already become a part of the Rappahannock school lunch program. Recipes that call for ground beef have been altered to use 50 percent ground turkey and 50 percent ground beef, for example, she said, i
