HOME ECONOMICS Sweet Potato Biscuits 4 tablespoons sugar 4 tablespoons shortening 1 1/4 cups cooked, mashed sweet potatoes 1 1/2 cups flour 4 teaspoons baking powder 1/2 teaspoon salt Mix together sugar, shortening and sweet potatoes. Sift together dry ingredients. Add sweet potato mixture to flour mixture and cut in with two knives or pastry blender. Turn onto ■ floured surface and knead lightly. Roll to 1 /2-inch thickness, cut and place on baking sheet. Bake at 425 degrees for 15 minutes or until lightly browned. Sausage and Sweets 1 pound pork sausage 2 1 -pound cans sweet potatoes 2 tablespoons butter 1/3 cup brown sugar Shape sausage into 6 pattie. Brown lightly on both sides and drain on paper toweling. Slice sweet potatoes and arrange in greased baking dish. Dot with butter and sprinkle with brown sugar. Arrange sausage patties on top. Bake at 350 degrees for 30 minutes. Serves 4 to 6.
