Certain things in the food you eat can cause a normal cell in your body to change or “mutate”. In • other words, some foods can damage a cell. If a damaged cell becomes cancerous, it will divide and begin growing out of control. This is how a tumor develops.
Dietary factors that are known to promote cancer or changes in cells are excess fat in foods, chemicals used to cure meats such as bacon and ham, chemicals formed from char grilling meats, chemicals used to pickle foods and excess alcohol.
Even though some foods damage our cells, other foods can protect them or even reverse the damage before a tumor has a chance to develop. Foods that are known to protect us have fiber, vitamins, antioxidant, and phytochemicals, which are found in plant foods such as fruits, vegetables and whole grains.
Cancer is the second leading cause of death in Virginia. One in two men and one in three women will develop some form of cancer in his or her lifetime.
In 1997, the World Cancer Research Fund and American Institute for Cancer Research published a comprehensive report, “Food, Nutrition and the Prevention of Cancer: A Global Perspective,” which reviewed 4,500 research studies on diet related to different forms of cancers.
