But Peilegatta is quite familiar with the restaurant business. His grandfather opened a steakhouse in 1894 in Bethlehem, Pa., where he worked growing up.
And he’s quite familiar with life at a bakery, having been employed at Apple Hill Bakery for about a year before it closed.
“It was a good learning process,” he Said.
Now that he’s running the bakery, he can do things his way. This week he moved some of the display cases to alleviate traffic jams on busy mornings and put in a new floor. A photographer, he will hang on the walls what he calls his “fine art,” different than his poster-sized landscape photographs, which were at Apple Hill Bakery.
This week Peilegatta was also busy hiring new bakers. He said that he will encourage them to focus on their individual specialties.
“They’re making for me the best of what they make,” he said.
