1 jar (8 oz.) brown mustard

3-4 c. kosher salt

Cover all sides of meat with brown mustard (use entire jar). Put kosher salt on plate and roll all sides of meat in the salt. Salt coating should be thick. Meat will resemble a “snowball” with no meat or mustard showing through the salt coating. Handle meat with tongs at all times. A forte or knife should never be allowed to pierce meat before or during the cooking time.

Place in oven at 475 degrees. Cook 10-12 minutes per pound for rare, 12-14 minutes for medium and 1520 minutes for well done. When roast is ready, crack the surface of the roast with a knife. The outer casing of salt and mustard coating will fall off roast. Proceed with carving roast as desired. Make sure a pan is handy to catch all of the encased juices. Yield: 6-8 servings.
