Most good apple juice, sweet cider and hard cider are made from blends of a number of varieties. One local orchardist told me he uses onehalf york, one-fourth staymen, and one-fourth delicious. Several of our' local orchards have cider presses which are interesting to take th( kids to see.
Apple cider and apples were substitutes for currency in colonial days. The wealth of a town was sometimes measured in terms of the number of barrels of cider put down for the winter, and no farmer ever felt that he had completed his fall work until several barrels of cider were put into the cellar for the winter months.
Today, thanks to modern technology, good sweet apple juice and apple cider are available year round, and are doubtless better quality than our forebearers enjoyed.
