Wash sweet potatoes; bake at 375 degrees for 1 hour or until done. Allow potatoes to cool to touch. Cut a 1-inch lengthwise strip from top of each sweet potato; carefully scoop out pulp, leaving shells intact.
Mash sweet potato pulp; add butter, orange rind, brown sugar, salt, cinnamon, orange juice, and chopped apple, mixing well Stuff shells with sweet potato mixture. Bake at 350 degrees for 25 minutes. Yield: 6 servings.
