Spinach Pizza 1 tablespoon yeast 1 '/t cups warm water 4 cups sifted all-purpose unbleached flour 5 tablespoons olive oil 1 teaspoon salt 2 cups Italian sausage (hot), casing removed 1 '/i cups chopped onion 2 garlic cloves, minced 3/4 cup chopped green pepper 1¥> cups sliced mushrooms 1/2 teaspoon dried oregano 1/2 teaspoon dried thyme 8 cups spinach Salt and pepper 3 cups grated Mozzarella 1/2 cup grated Parmesan cheese Sprinkle the yeast over the warm water and set aside until the yeast foams. Add the flour, 2 tablespoons of the olive oil, and the salt. Mix to form a ball. Knead for 5-10 minutes on a floured board. Cover and let rise for 30 minutes while you prepare the filling. ; Brown the sausage, drain and set aside. Heat 2 more tablespoons of olive oil and saute the onion, garlic, green pepper, mushrooms, oregano and thyme, until the onion is limp and the green pepper is tender crisp, 3-5 minutes. Add the spinach and saute until it is wilted, about 2 minutes. Remove from heat. Season to taste with salt and pepper. i Preheat the oven to 475 degrees F. Roll the dough out to fit a large cookie sheet or roasting pan, forming a 3/4-inch edge. Sprinkle half thie Mozzarella cheese over the dough. Spread the spinach mixture over the Mozzarella. Sprinkle the remaining Mozzarella and the Parmesan cheese on top. Grind fresh pepper and crumble a pinch of oregano on top. Drizzle 1 tablespoon oil over the top of pizza. Bake for 30 minutes. Yield: 6-8 servings. Chinese-style Spinach 1 pound fresh spinach, washed, cut into 2-inch pieces 2 tablespoons oil Salt to taste 1 small can bamboo shoots 8 fresh mushrooms, sliced 1/4 cup chicken broth Wash spinach; cut into pieces Heat oil in wok or skillet. Add salt and spinach; stir-fry 2 minutes. Add bamboo shoots, mushrooms, and broth; mix. Cover; simmer about 2 minutes, until heated through. Yield: 2 to 4 servings. I
