Instead of following his dream of cooking, he went into kitchen design, traveling and creating the perfect cooking situation.
Years later, his brother found the little Etlan deli Mr. Gillies now owns.
Working with his wife as bookkeeper, the two built the now expanding business.
“She is the marketing end,” he said with laughter, adding her years of experience with Dairy Queen has given her background in keeping books and ordering.
“This is fun,” he said. “If it wasn’t fun, I wouldn’t do it.”
