Barbara Burke asked me to share the recipes used by the Rappahannock Woman’s Club at their Fashion Show on Sunday, March 22 in my column this week.

The Woman’s Club sponsored their annual Fashion Show last Sunday afternoon despite the threat of snow. This was the club’s annual fundraiser to raise money for their scholarship to a graduating senior and other community projects. In addition to the scholarship proceeds will go to the Rappahannock Park to be used for new playground equipment.

The following are recipes served at the tea during intermission at the fashion show.

Chicken salad puffs

1 chicken, skinned

Stalk of celery

Salt and pepper

3/4 cup finely chopped celery

1/2 to 3/4 cup light mayonnaise

Seasoning salt

Pepperidge Farm mini-pastry puffs (found in frozen food section)

To make chicken salad: cook chicken in quart of water with celery, salt and pepper until tender. Cool, bone and chop. Add chopped celery and mayonnaise. Season to taste with a little seasoning salt.
