Vi cup milk

2/3 cup mashed potatoes

1/3 cup lard

1cup flour

2 T sugar

4 t. baking powder

Heat oven to 400 degrees. Blend lard into mashed potatoes, then add dry ingredients. Blend in milk, then knead the dough a dozen times. You can either roll it out and shape into biscuits to be cooked on an ungreased baking sheet or drop the whole thing into a cast iron skillet, flatten it out and bake it into one large super-biscuit. Bake approximately 25 minutes or until crust is golden brown.

Now, Aunt Gladys and Aunt Michele are having quite a dispute over whether the above is really a biscuit or plain old mountain “tater cakes”—but it doesn’t matter much what you call it as long as you like the way it tastes. Aunt Gladys says if you don’t, you can just give it to the doers.
