Also on the Sedar plate are the bitter herbs, such as horseradish, a reminder of the bitterness of slavery; a roasted lamb shankbone, symbolizing the sacrificial lamb; a hardboiled egg, the symbol of life; greens like parsley, representing new hope; horoset, a food made of apples, nuts,
cinnamon and wine, symbolic of the mortar used by the Hebrew slaves to build Pharaoh’s cities; and salt water, for the tears shed by the Jews during the time of slavery.
At appropriate points during the * Sedar festival, amid blessings and ritualized questions and answers between the father and child contained
in the Haggadah, each participant tastes the symbolic foods and sips the wine, which as in all Jewish ceremonies
of rejoicing, is a token of celebration.
