Eggplant: The last of the spring crops to go in. Much more sensitive to cool weather than tomatoes and should be transplanted after the ground is good and warm. Dusky is an American hybrid excellent for large early fruit. Ichiban hybrid is a slender, dark Oriental variety slow to make seed but a heavy bearer. Neapolitan Black is a long slender European type larger than Oriental types.
■ Endive: Major salad plants more tolerant of varying weather conditions than lettuce. Use plenty of water and fertilizer. May be cut more than once. Neapolitan summer endive has abundant curly green leaves and is heat tolerant (some shade in summer helps). Neapolitan white escarole has broad leaves with a light colored heart. Also heat tolerant, but some shade needed for summer production.
■ FinocChio: Bulbing fennel. Root swells and is eaten like celery. Has a refreshing anise flavor. Grow in rich, loose soil. When bulb starts to swell, pull soil over it to blanch. Foliage may also be used. Do not let seed form.
■ Leeks: Need a long growing season. Quite winter hardy. Loose, well-drained soil is a must. Plant very deep or plant in a trench and gradually fill in as leeks grow. Keep abundantly watered during summer.
