1 egg, well-beaten 3 Tablespoons molasses 1 teaspoon soda 1 cup buttermilk or sour milk 11/2 cups tart apples diced (Stayman or Golden Delicious) Pre-heat oven to 350 degrees. Mix and sift together flour, spices and salt. Set aside. Cream shortening; add sugar gradually and cream until soft and fluffy. Add egg and molasses. Beat well. Dissolve soda in milk. Add milk and flour mixture alternately to creamed shortening and sugar, beating well after each addition. Stir in diced apples. Bake in a well-greased floured cake pan (9-inch square) at 350 degrees about 50 minutes until gingerbread pulls from sides of pan. Serve warm with dollops of sour cream, yogurt or whipped cream. Serves 8.
