Keeping the “crunch”

The large packing houses use Controlled Atmosphere store (C.A.) to keep apples at their just-picked flavor and crunch year-round. C.A. is a natural strorage process. Newly picked apples are placed in rooms where most of the oxygen has been removed. The reduced oxygen levels slows the apple’s natural respiration down to almost a standstill.

To keep apples crisp at home, keep them cold. Apples will soften 10 times faster at room temperature. So place them in a plastic bag in your refrigerator or keep them in the basement where it’s cold.

This week’s recipes are apple snacks with kid appeal. Try them.

Choco-nut dip: Combine equal parts chocolate chips and peanut butter. Microwave until melted; stir. Serve with fresh apple slices.

Grilled apple-cheese sandwiches: Afld thin apple slices to a slice of American cheese between two slices of bread. Grill or toast until melted. Raisin bread is great!

Applesauce is a topping children love! Spoon it over hot oatmeal, over ice cream, or pudding, or mix in granola for a sweet crunch.
