Cinammon to taste 1/4 teaspoon cloves 1/3 cup bran flakes, crushed Layer oat bran in the bottom of a greased 8-inch square pan. Place apple slices on top. Pour apple juice over and sprinkle with prunes, raisins, cinnammon and cloves. Cover with foil and bake at 350 degrees for one hour. Remove foil, sprinkle with bran flakes and bake 15 minutes longer. Yield: six servings. Bran muffins (Mary Williams) 11/4 cups all-purpose flour 2 tablespoons sugar 1/4 teaspoon salt 1 tablespoon baking powder 1 1/2 cups Kellogg’s All-Bran ce real 11/4 cups skim milk 2 eggs whites 2 teaspoons vegetable oil Stir together flour, sugar, salt and baking powder; set aside. In large mixing bowl, combine Kellogg’s All-Bran cereal and milk. Let stand about three minutes or until cereal softens. Add egg and oil, mix well. Add flour mixture, stirring only until combined. Portion batter evenly into 12 lightly greased 2 1/2inch muffin-pan cups. Bake in 400 degrees F oven about 20 minutes or until golden brown. Serve warm. Yield; 12 muffins.
For muffins with reduced calories, fat, sugar and cholesterol: 2 tablespoons sugar 2 tablespoons oil 2 tablespoons skim milk Subsitute 2 egg whites for 1 egg. 110 calories per muffin, 4 g dietary fiber, 3 g fat, less than 1 mg cholesterol. Pour into a clean jar with a lid. Refrigerate. Use on raw vegetable salads or heat to serve on meats. Makes 7 servings (3 tablespoons/servings).
