from single chops to large whole legs with the bone left in. For roasting, leg and shoulder are preferred, while the shank makes a succulent piece for stewing. Breast of lamb, boned and stuffed with a flavorful mixture, is a favorite and economical dish in French kitchens. Rack of lamb is quite possibly the most elegant cut for presentation at a dinner party.
The optimum choice for Easter, however, is a roast leg of lamb, either fully boned out or French cut, with the shank bone left intact and the other bones removed, which makes carving much easier. The pocket left when the bones are removed can be stuffed with chopped herbs and garlic, or with a spicy sausage mixture, before roasting.
