Bermuda onions are medium to large, round or semiflat, white or yellow skinned, mild and sweet.

Red or purple onions are mild enough to eat raw. Its crisp, variegated flesh does not lend itself to cooking as it becomes watery and the color runs. Use them in salads and for garnishing.

Vidalia are tender, sweet, mild and succulent. The vidalia is eaten like an apple in Georgia where it’s grown. They are harvested early before they develop a strong flavor. Usually available in May and June, they perish rapidly and should be used immediately.

Walla Walla onions are sweet, round, firm, succulent and flavorful. They are from Washington State and are winter hardy. They are juicy, mild and crisp with a pale flesh.

Small white onions, shallots and garlic are also members of the dry onion group. Shallots are small, brown-skinned clustered bulbs that taste like a cross between onion and garlic; their flavor is delicate and subtle, yet tangy.
