Baked peanut butter chicken 1 broiler-fryer chicken, 2 1/2 to.3 lb., cut into serving pieces 1/4 cup flour legg 1/3 cup peanut butter » 1 tsp. salt 1/8 tsp. pepper 1/3 cup milk 1/2 cup dry breadcrumbs 1/4 cup peanut oil Wash and dry chicken pieces. Dip into flour; set aside. Blend egg with peanut butter, salt, and pepper. Gradually add milk, beatipg with fork to blend. Dip floured chicken into peanut butter mixture and then into crumbs. Place on oiled baking pan. Drizzle remaining oil over chicken pieces. Bake at 375 degrees 45 minutes or until tender. Makes 4 servings. Company ham steak 2 fresh ham steaks (about 2 lb.) . 1 cup stale bread cubes 1 cup finely chopped celery 1/2 tsp. salt 1/2 cup broth 2 T. peanut butter 1 T. orange marmalade 2 T. soy sauce 1/4 tsp. freshly ground pepper Place one hamtst^k in greased flat casserole. Combine bread, cel-i ery, salt and 2 tablespoons broth. Mix lightly and spoon onto ham steak. Top with second steak. Skewer edges together with toothpicks. Mix remaining broth with other ingredients. Spread 1/3 of this mixture on steaks. Bake at 350 degrees 1 1/2 hours, basting 3 times with remaining sauce during baking. Remove toothpicks and slice. Makes 6-7 servings.
