Soft-shell crabs All-purpose flour, seasoned with salt and pepper Clarified butter Fresh lemon or lime Lightly dredge the crabs in seasoned flour. . 1 Saute in hot pan in small amount of clarified butter. Cook about 3 minutes on each side or until lightly browned. Squeeze a small amount of fresh lemon or lime juice over crabs. Re-i move from pan; serve at once. , Note: To enhance the crab entree - saute 1/3 cup slivered almonds in. pan after removing crabs. Sprinkle golden almonds over crabs. Crab beer platter Soft-shell crabs 1 (12-oz.) can warm beer 1 1/4 cups all-purpose flour (lightly spoon into cup) ■ 2 tsp. salt 1 tsp. paprika 1/2 tsp. baking powder To mix batter, pour beer into t bowl, add flour and then remainder.^ of ingredients. Mix well. Note: Batter should be preparedat least 1 or 2 hours in advance since ' it will thicken as it stands. Dust crabs lightly in all-purpose flour, then dip singly in batter.
