Easy Beef and Salsa Burritos Total preparation and cooking time: 25 minutes. Convenient prepared salsa, frozen spinach and shredded Co-Jack cheese help make this meal-in-a-tortilla 25 minutes quick. This contemporary burrito was inspried by a 1993 National Beef Cook-Off finalist. 1 pound lean ground beef 1 tablespoon chili powder 1/4 teaspoon ground cumin / 1/4 teaspoon ground salt ' 1/4 teaspoon pepper 1 package (10 ounces) frozen chopped spinach, defrosted, well drained 1 cup prepared chunky salsa 3/4 cup shredded Co-Jack cheese 8 medium flour tortillas, warmed 1. In large nonstick skillet, brown ground beef over medium heat 8 to 10 minutes or until no longer pink, stirring occasionally. Pour off drippings. 2. Season beef with chili powder, cumin, salt and pepper. Stir in spinach and salsa; heat through. Remove from heat; stir in cheese. 3. To serve, spoon 1/2 cup beef mixtures in center of each tortilla. Fold botton edge up over filling; fold sides to center, overlapping edges. Makes 8 burritos (281 calories per burrito).
